100% Blue Weber (Agave tequilana) single estate grown at an elevation of over 7,000 feet, fermented in open air wooden tanks 80–90 hours. Distilled twice using traditional copper pot stills, and aged 2–3 months in new American white oak that has briefly held tequila to soften the tannins; filtered with paper and charcoal before bottling. Flavors of black pepper, white flowers, banana, baking spice, and soft green herbs.
