Principia Mathematica starts with a direct press and a wild-yeast fermentation, then divides: two-thirds goes into French oak barrels of 228 and 700 liters, the remaining third into stainless steel. Alemany i Corrió makes it from 100% Xarel·lo, drawn from vines roughly 30 to 45 years old on clay and limestone in the Penedès. Lemon zest and yellow apple lead, framed by smoke and toasted nuts, with dry hay and struck flint behind them. On the palate the texture is creamy but never heavy, held up by vivid acidity and a light salinity that lingers at the close. It is at home with whole grilled sea bass, nigiri or arroz negre.

94 Points, Luis Gutierrez, Robert Parker's Wine Advocate: "The white 2024 Principia Mathematica comes from two old vineyards, 70% from one in the Garraf and 30% from a smaller one in central Penedès (Subirats). The grapes were pressed and fermented slowly with indigenous yeasts in untoasted 700-liter oak barrels and a 1,000-liter oak foudre, where the wine matured for eight months including malolactic fermentation and then was bottled unfined and unfiltered. It has a lot of freshness, a clean and elegant nose and a balanced palate. It has contained ripeness, with 12.05% alcohol and a pH of 3.2 and a tasty and chalky finish. 7,300 bottles produced.
