Elisabetta Geppetti's Fattoria Le Pupille draws this white from two contrasting sites: Pian di Fiora at Pereta, on stony tuff with alabaster and a touch of chalk, and San Vittorio at Scansano, on clayey silt with quartz and rock of magmatic origin. The 2024 is 70% Sauvignon Blanc and 25% Petit Manseng, with the remaining 5% split between Traminer and Semillon. The crushed grapes rest on their skins for up to four hours before a gentle pressing and fermentation in steel, while part of the cuvée spends 25 days fermenting in second-use 500-liter tonneaux. Five months on the fine lees follow. Cut grass, elderflower and lime lead into green apple, white nectarine, sage and ginger, with juicy, zesty acidity and citrus lingering on a stony finish. Critics see it at its best over the next few years. It shines beside cedar-roasted sea bass, trofie al pesto or crudo.

Grown in the coastal Maremma, where sea breezes help preserve acidity, this pretty white blend offers exotic notes of jasmine and Sicilian zagara along with hints of citrus peel. It should offer modest aging potential thanks to the significant proportion of Petit Manseng and the natural acidity of the other varieties. I also smelled the sage planted along the walkway leading up to the estate’s new offices and tasting room, a detail that felt quietly echoed across this entire line of new releases." 02/26
