Pichon Baron farms 73 hectares in Pauillac, yet only the best 40 go into the grand vin, which draws on the estate's oldest vines, some planted in the 1930s. The 2019 is 87% Cabernet Sauvignon and 13% Merlot, made under technical director Jean-René Matignon at a Second Growth owned by AXA Millésimes since 1987. A cool, damp spring turned hot and dry from late June; mid-véraison fell on August 4 and 5, and late-September rain hastened the harvest, with Cabernet picked from September 30 to October 11. After 18 to 23 days of maceration, the wine spent 18 months in barrel, 80% of them new. The heat shows as richness: dark fruit framed by cedar, tobacco, licorice and bitter chocolate, a dense, fleshy palate, ripe tannins with real grip and a long, spiced finish. Côte de boeuf, braised short ribs or a wedge of aged Comté all suit it.

It has a captivating bouquet of intense blackberry, cedar, Japanese nori and sea spray notes on the nose, all exquisitely defined and poised. The harmonious palate is medium-bodied and classic in style, with pencil-lead-infused black fruit, lovely poise and not a single hair out of place toward the finish. Revealing a deep purple hue as well textbook notes of blackcurrants, smoked tobacco, freshly sharpened pencils, and liquid violets, it shows the more medium to full-bodied, elegant style of the vintage yet is brilliantly concentrated, has a supple, layered mouthfeel, ripe yet building tannins, and a great, great finish. It's more open and expressive than Mouton and shares plenty of similarities with Comtesse with its layered, supple, just perfectly balanced and classy style. It unquestionably already offers pleasure today (and it's a good time to try a bottle, as I wouldn't be surprised to see it close down), but it will need a decade to hit maturity and it will be a 50-year wine." 04/22
