Stag's Leap Wine Cellars Fay Napa Valley Cabernet Sauvignon 2016 (750ML)

Cabernet Franc enters the Fay blend for the first time in 2016: 2%, from the vineyard's first crop, planted to replace the original Petit Verdot. It joins 98% Cabernet Sauvignon and adds a subtle note of blueberry spice. Budbreak came early, but the summer ran far cooler than usual, without the typical July and August heat, giving the fruit a long hang time; yields dipped slightly and ripening was even. Picking ran September 26 to October 11. Marcus Notaro chose barrels by type and toast to suit FAY's fruit, and the wine spent 20 months in 100% new French oak. Raspberry, blueberry and black cherry lead, edged with nutmeg, mocha and leather. The oak is well absorbed, fresh acidity carries the fruit, and the tannins feel satin-smooth. Critics had it drinking by the early 2020s. It shines beside smoked brisket, grilled portobellos or a pepper-crusted pork chop.
