Every component of Billecart-Salmon's Sous Bois is fermented in oak casks, a notable choice for a house that runs about 80% of its production through stainless steel. This release is built on the 2018 harvest, blending 39% Chardonnay, 33% Meunier and 28% Pinot Noir, with reserve wines making up 37% of the blend and reaching back to 2006. Dosage is a restrained 3 grams per liter. Cellar master Florent Nys makes the wines alongside Mathieu Roland-Billecart, the seventh generation of the family. It pours a coppery straw and leads with orange peel, roasted peach and marzipan, backed by toasted brioche and a smoky, stony edge. The palate is full and savory with a saline, umami depth, yet it stays fresh and shows no oxidative tilt. Reviewers expect it to show well through the next decade. Serve it with roast chicken and morels, butter-poached lobster or a wedge of aged Comté.
