Evening Land Seven Springs La Source Chardonnay 2023 (750ML)

La Source comes from a narrow band of just 14 vine rows at the heart of Evening Land’s Seven Springs vineyard, and only from the lower half of that band, where old-vine Dijon clones grow in volcanic soil strewn with iron-rich rocks and pebbles. The fruit is whole-cluster pressed and fermented in barrel with native yeasts, then spends nine months in 500-liter puncheons, 30% of them new, followed by six months in stainless steel. Just 528 cases were made. The aromas lean warm and pastry-like: caramelized apple tart, fig preserves, toasted almond and a touch of butterscotch. On the palate that warmth meets real tension, with a deep fruit core, a delicate mineral edge and oak held in proportion through a long, bright finish. Pour it with roast chicken and morels, seared scallops in brown butter, or a wedge of aged Comté.
