Vilmart's Grand Cellier uses grapes coming from premier cru vineyards and holds a signature that sets it apart in Champagne: the estate blocks malolactic fermentation across every wine it makes, keeping the natural acidity intact. This release is built on the 2021 harvest, with reserve wines from 2020 and 2019 folded in. Chardonnay leads the blend, with 30% Pinot Noir. It was disgorged in September 2024 and finished at 7 grams per liter dosage. The color is a bright, pale straw. Sugared lemon peel, raw pastry and baker's yeast come first on the nose, and the palate turns toward red currant and fresh citrus, carried on a fine, lively bead. It feels compact and firm at the moment, yet energetic enough to open today, and critics expect it to gain over the next few years. Pour it with oysters, hamachi crudo, grilled langoustines or a wedge of aged Comté.

Critic Reviews
James Suckling
93 Points
93 Points, James Suckling, jamessuckling.com: "A blend of 70% pinot noir and 30% chardonnay, this has a complex and sophisticated nose that delivers peach fruits and citrus, plus some bolder yellow plum fruits too. The palate is assertive, energetic and concentrated with peach and nectarine flavors met with lemony acidity. Long, really powerful Champagne here. Drink now or age on cork for three or more years." 10/15
Wine Spectator
93 Points
93 Points, Alison Napjus, Wine Spectator: "Toasty hints of brioche, coffee liqueur and vanilla bean on the nose are more subtle on the palate of this plush-textured Champagne, where flavors of persimmon, yellow peach, blanched almond and Mandarin orange peel are underscored by minerally saline and chalk. Shows lovely balance and length. Disgorged July 2018. Drink now through 2026." 10/21
Antonio Galloni
93 Points
93 Points, Antonio Galloni, Vinous: "The NV Brut Grand Cellier (2015 base) is fabulous. Rich, ample and creamy, the Grand Cellier is so alluring from the very first taste. All the Vilmart signatures - most notably uncommon elegance - come through loud and clear. Baked apple tart, pear, spice and a hint off butter add nuance, but it is the wine's overall feel that impresses most. Readers will have a hard time keeping their hands off this seductive Champagne from Vilmart." 11/20
Wine Advocate
91 Points
91 Points, William Kelley, Robert Parker's Wine Advocate: "The July 2019 disgorgement of Vilmart's NV Brut Premier Cru Grand Cellier is showing nicely, and it has hardly evolved in the last year. Unwinding in the glass with aromas of crisp Anjou pear, waxy citrus rind, bee pollen, white flowers and blanched almonds, it's medium to full-bodied, taut and incisive, with racy acids, chalky structuring extract and a pretty pinpoint mousse. This is based on the 2016 harvest with reserve wines from the 2015 and 2014 vintages." 03/21
Burghound
92 Points
92 Points, Allen Meadows, Burghound: "An elegant, pure and airy nose combines notes of citrus peel, soft yeast and plenty of green apple, pear and petrol scents. There is excellent intensity to the crisp, intense and focused flavors that terminate in a very dry and linear finish. As is almost always the case with Vilmart wines, the supporting effervescence is quite fine and overall, this could be enjoyed young or easily held for another 5 to 7 years depending on your preferences." 10/17, Issue #68
