Pedro Ximenez

One of the main varietals used in making sweeter styles of sherry, Pedro Ximénez is a white grape that is capable of crafting dark and lucious sherry through a process called ‘Soleo’ where grapes are laid to dry on straw mats in the sun for up to two weeks (similar to another Zachys favorite, Amarone). This allows for the sugars in the grapes to concentrate and make for a more complex dessert wine that all of us at Zachys look forward to at the end of a meal.
