This two-acre vineyard faces north and is steeply sloped with clay-rich and chalky soils. The Sauvignon Blanc is pressed whole cluster, then fermented on indigenous yeasts in older demi-muids prior to being aged in older, large tonneaux for more than one year. The results are a thing of beauty from Pascal Cotat, as this shows striking characteristics of citrus, white peach, mineral, saline and floral notes all coming together. This possesses a absolutely gorgeous texture with remarkable balance and precision throughout.
