Muller Thurgau Cave des Onze Communes 2011 (750ML)
Cave des Onze Communes is a co-op of 220 small growers located in 11 villages in the Val d’Aosta. The vineyard area for Müller-Thurgau is 6.5 ha circa, the age is between 15 and 25 years planted to various clones, the soil is of moraine and alluvial origin, the altitude is between 700 and 900 meters over the sea level. The exposure is mainly northwest with some vineyards facing south. This is to avoid the harmful effects of the heat right before the harvest, which would bring a lowering of the aromas and the acidity. Production is of 110 quintals per hectare. The 2011 harvesting was done at the end of August in most of the vineyards and the first week of September in the vineyards at higher altitude. The vinification provides de-stemming and pressing with a maceration of the skins with the must for 15/16 hours at low temperature to get the maximum of the aroma from the skins. The juice than is fermented with different types of cold-tolerant commercial yeasts at a low temperature (13/14ºC) to maximize the finesse and intensity of the aromas. The wine rests on its lees with periodic batonnage. Malolactic fermentation is avoided. Production is 50,000 bottles per year. Sustainable
